The idea behind this midweek day and dish is to incorporate what you love and have on hand (in your refrigerator or pantry), to create an indulgent and super-easy spoil-yourself-breakfast-treat day. And anything goes... It can be cold leftover pizza (nuked or un-nuked) solo, or with an add of something extra, and even left over dessert or dinner from the evening before. We've been known to enjoy next day pasta dishes with an extra sprinkle of freshly grated Parmesan cheese and a tad of olive oil. Yum! I look forward to this morning escapade each and every week, and with fruits being my thing with breakfast, will always have fresh loved fruits of the season on hand, and even keep a can or two in the cupboard as back up so as not to miss out on that healthy a.m. fruit serving...
I made stewed strawberries for our weekend evening dessert topping two weeks ago, and used the chilled leftovers with Wednesday's hump day breakfast, three days later.
Here's what you'll need... (Serves 8)
1 carton fresh, ripe and ready-to-eat strawberries (about 3 cups whole fruit)
1 tablespoon granulated sugar
1 teaspoon pure vanilla extract
a squeeze of lime
Fruit bowl selections: 1/2 of a ripe banana, 3 whole strawberries sliced, a dollop of strawberry fruit yogurt, semi-sweet chocolate chips, and 1 generous scoop of fresh vanilla ice cream (store-bought or homemade from the day before)
And how to make it...
Gently rinse the strawberries and allow any excess water to drain. Hull and slice the strawberries in medium to thick slices.
In a sauté pot, add the sliced strawberries, sugar, vanilla extract and squeeze of lime and bring to a bubbling boil for 2 minutes (stirring as the berries begin releasing their juices. The aroma gets me every time.
Reduce the heat to medium-low and simmer for 8 - 10 minutes. Turn off the heat and let cool to room temperature. Chill overnight in the refrigerator in covered glassware.
The next day-- Create your desired layers: 1/2 of a ripe banana sliced, dollop of strawberry yogurt, fresh sliced strawberries, a scoop of vanilla ice cream, chilled stewed strawberries, and a sprinkle of semi-sweet chocolate chips. Dive-in!
