Say it isn't so... but it really is so-- It's kinda that time when we're in picnic mode (sunshine ablaze and all) and are unpacking our tucked away beach towels and bikinis this side, and thinking wild(er) things: road trips, new untravelled escapades, private tucked away laying-in-the sun spots, and all the possible, potential how-to-get-away-with-it-sunscreen-mischief and then some, where at times all that may be in sight is 'la sunglasses'. :)
Let me invite you to indulge in creating, making, and sharing your own casual homemade hangout, seasonal sandwich with family and friends, bypassing all pickled pickups, for the ride out, and even about. Take a favourite, load that loved lean meat protein on and make a magnificent moment of it, sooner or later, but knowing very well that sooner is always best. How will you stack it? Here's our go-to starter from my gram who made a mean layered sandwich back in the day, with more variations to come in our months ahead. Remembering our amazing and fearless gram whose birthday is also in May and all the ways her love has transcended through our decades...
Yep, let there be crisp oven baked maple bacon, at least once. Please.
And of course all our other essentials: favourite gluten-full or gluten-free loaf bread, mayo with a huge kick, iceberg lettuce leaves (washed, pat dry and ready to go), lean and well-seasoned grilled meat of choice (chicken is our always-magic fill), ripe tomato slices too (if desired).
Create medium-thin slices of chicken breast.
Create your layers: Toast the slices of bread, spread a generous amount of mayo on both sides of the warm bread, layer with 3 - 4 lettuce leaves, then a few strips of crispy bacon, top with a few slices of grilled chicken and then cover with the remaining slice of toasted bread with mayo. Carefully slice down the centre or diagonally.
Stacked and ready to serve warm as is, or wrapped in wax paper and then foil to go. 'Just as Gram did it back then.
