It was indeed 'a-coming... a little boozy Friday/ weekend treat to celebrate the cooler temps in the south and deeper-freeze in the north. Do you enjoy a lazy sleep-in day each week? In our home it's a definite must. This weekend I'm looking forward to a buttered toast, tasty new marmalade and scrambled eggs breakfast in bed with a movie. Here's what you'll need (Makes 2):
2 1/2 cups milk of your choice (I used 1 1/2 cups 2% milk and 1 cup coffee cream)
4 heaping teaspoons instant coffee or espresso (I used my favourite)
fine granulated sugar (to sweeten to taste)
pinch of cinnamon + extra for topping
1/2 teaspoon pure vanilla extract
4 oz Baileys Original Irish Cream
Whipped Cream
Directions:
1. In a medium-sized sauce pot, gently warm the milk on low to medium heat until hot and steaming.
2. Reduce heat to low and slowly add the instant coffee one teaspoon at a time gently stirring constantly until each spoon is fully dissolved in the hot milk.
3. Add the vanilla and cinnamon to the pot, then the sugar, sweetening to your desired taste.
4. Remove the hot blended milk from the stove and stir in the Baileys Original Irish Cream.
5. Pour into coffee mugs and top with whipped cream and a sprinkle of cinnamon. Enjoy.
