A taste of ♫ Ibiza from the work week...
La Luna - Climatic Café del Mar Chillout Legend
Here's what you'll need:
2 salmon fillets
Kosher salt
white/ black pepper
garlic powder
4 tablespoons pure olive oil
2 tablespoons butter
4 tablespoons honey
3 tablespoons gluten-free or low sodium soy sauce
1 - 2 fresh limes (as per your taste preference)
green onions (for serving)
1. Lightly rinse the salmon fillets in mild salt water, pat dry with paper towels, and season with salt, pepper, and garlic powder.
2. Heat the olive oil and 1 tablespoon of the butter in the skillet over medium to medium-high heat.
3. Place the salmon (skin side down) in the skillet and let it cook for 5 - 6 minutes.
4. Gently flip the fillets to the other side and cook for 3 - 4 minutes. Remove the fish from the skillet to a clean plate.
5. Reduce heat to medium. Using the same skillet, add the remaining tablespoon of butter, honey, soy sauce and juice from the lime(s). Stir, cooking over medium heat for 3 - 4 minutes until the glaze thickens a bit. Do a taste test and add more of what's needed for your sweet n' tangy flavour preference. Simmer for 1 - 2 minutes. Add the salmon fillets back to the skillet and spoon the sticky sauce over the fillets.
6. Remove cooked salmon from the skillet and top with chopped green onions. Serve warm with a favourite: jasmine rice, a garden salad, baked potatoes, garlic bread, etc...
