A simple and super-tasty fall favourite we've been indulging in since last month actually, with our seasonal ebbs and flows. The best part is its three-ingredients: red potatoes, pure olive oil, and sea salt. And that's it! No extra spices and frills needed for more elevating thrills. This classic side dish is perfect and delivers as is, rooted in wholesome warmth, fiber-rich red skins, B vitamins, potassium and iron. And did you know that red potatoes have more potassium per serving than any other fruit or vegetable? Yep, they do. We love the buttery deliciousness of it and the fluid energy it brings to our muscles. And in my world, gluten-free makes it a very good thing too...

Here's what you'll need (Serves 5 - 6):
5 medium-sized red potatoes (rinsed and scrubbed)
1/3 cup pure olive oil
1 1/2 teaspoons sea salt
Directions:
Pat dry the rinsed and scrubbed red potatoes. Set aside.
Place a baking sheet in a baking tray and lightly grease with olive oil.
* Set oven to 350° F with the oven rack in the middle.
Cut potatoes into quarters or more (if too large), placing in a large bowl.
Drizzle the olive oil and sprinkle the sea salt onto the potatoes. Toss to evenly coat the potatoes.
Arrange the coated potatoes in a single layer on the prepped baking sheet.
Bake for 45 minutes, gently tossing potatoes after 20 minutes.
Remove from the oven and serve warm.
