While making this simple Sunday sit-down and relax home-cooked dinner three weeks ago, I didn't know if I'd have enough shrimp for taking that final photo (above) as we kept sampling a shrimp here and there— and I was just as guilty — and sure enough, — we didn't. Hence, this post finally making it on a quicker and quieter Round II afternoon for the year, with last week's planned Thursday post on a cyberspace layover of sorts... The whole thing is too funny, but I didn't want another dessert in its sacred space with focusing on more from-the-sea bites this year... so had to wait until more shrimp made its way to the gate. What I will say about it, is that it makes for a great laid-back bonding moment of playful laughter, all while catching up with our recents of the day or week. Something warm, flavourful, and perhaps with an element of surprize, works very well indeed. This is a loved weeknight or weekend comfort main that's super-easy and ready in 30 minutes or less. And because it wouldn't feel like an authentic winter without a little pasta somewhere in the mix. :) Love. Happy weekend everybody. ~xx

Tycho - Japan (ft. Saint Sinner)
Ingredients (Serves 4), but... :
1 pound medium white shrimp (31- 40), peeled, deveined, and tails left on
3 pinches Kosher salt
1 teaspoon garlic powder
3 tablespoons pure olive oil
3 cloves garlic, crushed and peeled
2 cups Rao's Homemade Tomato Basil Sauce
1 cup freshly grated Parmesan cheese
2 - 3 stalks green onions (rinsed, patted dry and minced)
Spaghetti of your choice
Directions:
Gently rinse the fresh shrimp in very mild salt water: 1 pinch of salt, then cool running water. Allow to drain completely and pat dry.
In a large bowl, add the shrimp, then 1 tablespoon of pure olive oil to the shrimp and gently toss. Add the dry seasoning: 2 pinches salt and garlic powder. Set aside to marinate for a few.
On medium-high heat, add the remaining olive oil and crushed garlic to a large heated semi-deep skillet. Add the shrimp and toss in the hot oil for 3 - 4 minutes.
Add Rao's Tomato Basil Sauce and simmer on medium to low heat for 5 - 10 minutes.
Top over your warm cooked spaghetti.
Add some freshly grated Parmesan and garnish with minced green onions.
