Somewhere between barbecue strips and cutlets, — and no need for any pounding or 'tricky' slicing through these chicken breasts to get there from our indoors. It was simply all about trying a new sauce for some flavourful variety, with chicken becoming quite the new staple in recent times. And perhaps you too have found yourself more often than not, dining on one thing at a time, bypassing the balanced plate with any one meal, on the average day. We tried it and loved it, and will definitely take another light and easy spin with this gentle and mellow, kiddie tested and approved honey sauce. Here's how I made it with:
3 large boneless, skinless organic chicken breasts
2 fresh limes
3/4 cup white vinegar
1/4 teaspoon iodized table salt/ fine kosher
1/4 teaspoon white or black pepper (optional)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 tablespoons light olive oil
1 cup Simply Natural Organic Barbecue Sauce with Honey
'Always love overnight marinating of our meats for more infused flavour.
Directions (Serves 3 - 6):
Under cool running water, rinse individual breast pieces, rubbing with the juices and flesh of half of a lime and then a 1/4 of cup vinegar for each breast. Lightly rinse and pat dry with paper towels. Slice into smaller serving size strips or thirds.
Season the chicken pieces with the salt, pepper (if using), garlic and onion powder. Add a 1/4 cup of the barbecue sauce and toss again. Cover with plastic wrap and marinate overnight in the refrigerator.
Remove from the refrigerator 15 minutes before cooking time to lose some of the chill. // Line a baking tray with a baking sheet.
To a large skillet on medium-high heat add the olive oil. Once heated, add the chicken pieces and lightly brown on both sides (5 to 8 minutes), tossing the chicken around after 2 minutes. Remove the chicken from the skillet and loosely place on the baking sheet.
*Set oven to 400 degrees F, top rack ready.
Generously brush half of the remaining barbecue sauce on the chicken. Place the tray in the oven, on that top rack and let bake for 8 to 10 minutes. Remove from the oven, flip the chicken pieces to the other side, brush with the remaining sauce and place back into the oven for another 8 to 10 minutes, or your desired doneness.
Off the heat, remove from the oven and serve very warm.
