If we're being honest, right around now, and even if you're reading this before 12 noon, all moms (empty-nesters included, #thisistrue) would welcome a fizzy! sip to thaw out and chill-lax for a few with balancing the kids: monitoring online school modules and indoor activities, work from home adjustments on all levels, and of course... the housework, always an ongoing of some kind. I thought about this — I really did — and decided on a refreshing and playful frozen rosé blend (very Dad-doable) to embrace our succulent spring-season strawberries, a soft pink booze to celebrate Mom, and desired fuss-free prep, for a laid-back afternoon or evening with or without the homemade pizza, but I'd say, make the pizza or other homemade favourite too, keeping it light and fun. 'Loving the indoor spring concert feels of ♫ this mellow track from our homey weekend...
Here's how I made it with:
1 bottle well-chilled favourite Rosé (or chilled fruit juice)
2 cups strawberries (rinsed, hulled, and sliced in halves)
3 tablespoons fresh lemon juice
3 tablespoons superfine sugar
Directions (Serves 4):
*Any Rosé works; solo or with fresh fruit syrup adds. You may have to adjust the overall sweetness kick to your preference (adding some simple syrup [1 cup superfine sugar fully dissolved in 1 cup of water over low heat, stovetop]) with a low sugar Rosé, — or adding 1/2 cup cold water to a higher sugar content Rosé).
On medium heat, add the strawberries to a medium-sized pot along with the sugar and lemon juice. Toss gently as the sugar dissolves and the strawberries begin releasing their juices (over the next 5 minutes). Simmer on low heat for 10 minutes. Off the heat, mash the strawberries, cover with lid, and let sit to room temperature. Once cooled, strain the juices into a container and chill for 4 - 6 hours in the refrigerator.
Thirty minutes before serving, place freezer-safe serving glasses in the freezer. Pour the entire bottle of chilled Rosé + a 1/3 to 1/2 cup of strawberry syrup into your ready-to-go ice cream maker* and let blend for 25 minutes. *Or, use this freeze and scrape method which comes out just as lovely (allow for the extra prep time).
Serve immediately in frosty glasses. Garnish with a strawberry (if desired).
And I don't think she'd mind a few strawberry slivers in her frosty glass.
P.S. If Mom is expecting or for our younger kids, this recipe works well with 3 cups of her/their favourite fruit juice or nectar, and a squeeze of lemon juice.
