A lovely highlight of 2020 has been and continues to be enjoying our squirrels as they scurry up and down our trees, along extended branches, and quietly hop onto our railings leaving sunburst leafy treats ever so often. Something from 'their' world. They make us smile, laugh, and even confirmed the importance of afternoon sunbathing balance :) again this summer. A true mental wellness lift to the year that was. Their favourite gift is the pecan nut, and they shamelessly snub any healthy veggie offerings... to this day. So the pecan it was, and remains. Back in September while enjoying a late breakfast outside I decided to combine our two favourites: pecans (our squirrels'), and chocolate (moi). Sweet, nutty and delicious, this is our holiday luxury bite: Chocolate Pecan Clusters. Happy holidays! Here's to staying safe, following our health guidelines, and welcoming a healthy New Year ahead. Roasted maple syrup pecans: Line a small baking tray with a baking sheet and loosely spread the pecans. Drizzle with maple syrup and roast at 400 F for 8 to 10 minutes, gently tossing halfway. Let cool completely and chop each large pecan half, in half (to quarter size pieces).
Ingredients (Serves 6 - 12):
1 cup organic pecan halves
2 tablespoons pure maple syrup
1 cup favourite chocolate; chopped (dark, semi-sweet, or milk)
Pinch of fine flaky sea salt
Line a baking tray with parchment and set aside.
Place the chopped chocolate into a heavy bottom saucepan and slowly melt on low heat, stirring every 2 mins. or so. Add the roasted chopped pecans (leaving the crackled maple syrup flakes in the tray as is, for the next step), and blend into the melted chocolate.
Move quickly while the chocolate is still hot and molten, using a small scoop (or spoon) scooping serving size wet clusters onto the parchment— Larger 6, or smaller 12 count servings or go with your flow... Sprinkle the tops with the leftover maple syrup crystals and pinch of flaky sea salt.
Place in the refrigerator for 3 hours (to overnight) to set.
Remove the tray from the refrigerator and leave on the counter for 15 to 20 minutes to release some of the harder-chill.
