Lowland - Mindcircus (Original Version)
Ingredients (Serves 3; multiply as needed):
1 large sweet potato
Fine Sea Salt (light sprinkles)
2 tablespoons garlic butter
2 cloves garlic (crushed)
2 stalks green onion (rinsed and finely chopped)
Directions:
Preheat the oven to 375 degrees F.
Rinse and scrub the sweet potato. Pat dry with paper towels. Using a thin paring knife trim the ends and make a few slits into and around the sweet potato. Wrap in foil (shiny side in) and roast for 35 - 40 minutes.
Ten minutes prior to the sweet potato being ready, in a small saucepan over medium-low heat, melt the garlic butter. Add the crushed garlic and green onions, stir, and simmer for 5 minutes on low heat.
Line a baking tray with a baking sheet and lightly brush with a pat of the garlic-butter mixture.
Remove the almost-baked sweet potato from the oven and carefully discard the foil wrap. Slice into ¾ - 1 inch pieces and place on the baking sheet. Using a fork, gently flatten each slice.
Pour a teaspoon of the hot garlic butter mixture over each slice and lightly sprinkle with the sea salt.
Up the oven temp. to 400 degrees F, and continue roasting for another 15 minutes (until the edges are slightly crispy).
Enjoy as is, or with a fun fish, chicken, beef or bean main.
