Sunday things... slower eggs. On medium-high heat, lightly sauté 2 tablespoons scallion whites in 1 - 2 tablespoons light olive oil for 1 minute. Add 3 beaten extra-large eggs and immediately reduce heat to low. Once the edges begin to set, sprinkle with salt, 1/2 cup grated mozzarella, and a 1/4 cup of scallion greens. Toss gently with a spatula until the eggs are fully cooked. Garnish with fresh ground red cayenne or black pepper and extra mozzarella. Serve hot. Breakfast for 2. 💕
