This month in chicken... Warm and flavourful bites from our smaller indoor oven, baking away as we enjoy 'other lovelies' of life? A tender, juicy, and filling main that's ready in 45 minutes (or less) to your preference...
Ingredients (Serves 2):
2 large (skinless & boneless) chicken breasts
1 lime + 1/2 cup white vinegar (to rinse the chicken)
light sprinkle of salt
lighter sprinkle of ground red cayenne pepper (or black pepper)
1 teaspoon garlic powder
1/2 cup pure maple syrup
6 slices of smoked honey bacon (or your favourite)
Directions:
The main thing here is to go easy on any additional seasoning after the initial light salt and even lighter ground pepper to indulge our maple syrup flavour.
Gently rinse and clean the chicken breasts with the lime and vinegar. Pat dry with paper towels.
Season the chicken breasts with the salt, pepper, and garlic powder. Add the maple syrup, toss in the bowl to coat evenly, cover with saran wrap, and marinate overnight in the refrigerator.
Remove from the refrigerator 20 mins before bake time.
*** Set oven to 375 F.
Wrap each breast with 3 slices of bacon. Discard the marinade.
Place the chicken on a baking sheet in a baking tray and bake (uncovered) for 30 - 45 minutes.
Serve warm with baked or creamed potatoes, or all the fries.
