This easy-going Garlic Butter Steak Bites dish was (is) a nice change and red meat surprize this month after maximizing my toaster oven's skills all summer, stepping away from the larger stove top. A few quick tosses in a spacious skillet/ pan over medium-high heat brings its deliciousness together for a lovely weeknight dinner, and flavourful Sunday brunch with buttered toast. Ingredients (Serves 2):
1 pound strip steak
1/2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon ground cayenne pepper (or black pepper)
5 cloves garlic
1/2 stick garlic butter
2 stalks green onions (minced)
2 teaspoons olive oil
I used a whole stick of garlic butter here, but you really only need 1/2 of a stick for full flavour.
Directions:
Pat the steaks dry with paper towels and cut into 1-inch bites. Place into a large bowl.
Crush and mince 2 garlic cloves and the green onions. Set each aside separately.
Season the steak bites with the salt, garlic powder, and pepper.
Toss in the minced garlic, half of the green onions, and olive oil. Cover with plastic wrap and marinate overnight in the refrigerator.
Allow the steak to rest counter-top for 20 minutes prior to searing (to release some of the chill).
In a large skillet over medium-high heat, melt the garlic butter with the 3 remaining garlic cloves (now crushed).
Add the steak and sear for 8 - 10 minutes, loosely tossing after 3 - 4 minutes.
Remove from the heat and garnish with the remaining green onions.
Serve steaming with roasted baby potatoes or warm toasted rolls.
