Warmer (and spicier) fall into winter bites for more home-cozy feels. Stovetop, indoor electric grill, or oven roasted; take your pick. All three are lovely but I continue to be biased with a preference towards my hardest-working, hands-free, timer set toaster oven while I multitask with other at-home pleasures. 'Tis the season. Satin Jackets feat. Tailor - Spell (Extended Mix)
Ingredients (Serves 4):
4 boneless (or bone-in) pork loin chops
1 1/2 teaspoons fine table salt
2 teaspoons garlic powder
1 teaspoon ground red cayenne pepper (or black pepper)
2 tablespoons ground ginger
1/2 cup ginger beer
1/2 cup green onions (minced)
5 sprigs of thyme
1 tablespoon light olive oil
Ginger Beer Marinade
2 cups ginger beer
2 tablespoons granulated sugar (or more) to taste
1 tablespoon fresh lime juice
Directions:
Wipe the pork chops with paper towels. Make a few 1/4-inch thick slices into each chop and place in a large bowl.
In a small bowl, combine the salt, garlic powder, cayenne pepper and ground ginger. Season the chops with the mix.
Slowly add a 1/2 cup of ginger beer to the seasoned chops. It may fizz a little.
Add the green onions and thyme, cover with plastic wrap and marinate in the refrigerator for 4 - 8 hours max.
Remove the chops from the refrigerator and allow to relax for 20 minutes.
Make the ginger beer basting marinade: In a saucepan over medium heat, dissolve the sugar into the ginger beer. Add the lime juice, stir, and bring to just a boil on medium-high heat. Reduce the heat to medium-low and simmer for 20 minutes.
Line a baking tray with foil and top with a baking sheet. Brush a little olive oil onto the baking sheet.
*** Set oven to 375°F.
Place the chops on the baking sheet and spoon some of the hot marinade over each chop. Top each with a sprig of thyme from the overnight marinating bowl. Place a sheet of foil loosely over the chops and bake for 35 - 45 minutes, spooning more of the ginger beer marinade after 25 minutes in the oven. Remove the top foil at 30 minutes and bake uncovered for the remaining 10 - 15 minutes.
Serve very warm.
