Warm, juicy, and cozy all the way. One of our easy weeknight favourites, especially when our weather is all over the place and the sunny stability we so desire seems fleeting. 'Cloudy with a Chance of Meatballs?' No heavy sauce, gravies, or glaze simmering needed. Enjoy bite-sized pieces with a condiment side serving of warmed organic ketchup, or light homemade dip. And I'm convinced they're even more delicious when baked in a baking dish. Recipe follows...
Ingredients (Serves 3 - 4):
1 pound lean ground beef
1 teaspoon fine iodized salt
2 cloves garlic, freshly grated
1/2 teaspoon ground red cayenne pepper
1 1/2 teaspoons Italian Blend Seasoning
1 tablespoon coconut nectar
1/4 teaspoon (freshly grated) ginger
2 teaspoons pure light olive oil (+ 2 teaspoons for the baking dish)
Directions:
Season the ground beef the night before with the above ingredients, cover with plastic wrap and marinate overnight in the refrigerator.
Remove 20 minutes before baking time to release some of the chill.
Set the oven to 375 degrees F, and lightly grease a baking dish with the extra olive oil.
Divide the seasoned beef into 4 and shape into 4 meatballs. Place in the baking dish with enough room to avoid touching each other.
Make a thumbprint indentation into each meatball (to help the meatball keep its shape during baking).
Bake uncovered for 10 minutes in the oven, and then loosely place a sheet of foil (shiny side down) over the dish and continue baking for 30 more minutes. Remove the foil and bake for an additional 10 minutes to get some added colour.
