A frozen mocktail for summer with both our kids (booze-free) and adults in mind, to celebrate our sunny season. Served semi-frozen for even more fun. Ingredients (Per serving):
1 generous scoop strawberry sorbet
3 - 5 fresh red (ruby) grapefruits
1 tablespoon pure maple syrup
pinch of fine sea salt
a dash of ground red cayenne pepper (optional, adults only)
fresh, extra slices of strawberries and grapefruit (for garnish)
Directions:
Peel around the middle of 1 grapefruit and place the peel in a saucepan. Juice the grapefruits and add the juice to the saucepan. Bring to a slow bubble and immediately off the heat and set aside to infuse and cool (30 minutes). Remove the peel and freeze the grapefruit juice in an ice cube tray.
To a high-powered blender add 1 scoop strawberry sorbet, 6 medium (or 3 large) grapefruit juice ice cubes, the maple syrup and sea salt. Blend for 5 - 8 quick seconds- keeping the mocktail semi-frozen, not pureed.
Pour into your choice of chilled glassware and add a dash of ground cayenne pepper, if desired.
Garnish with fresh strawberry and grapefruit slices. Delicious! ~xx
