Tried It, Loved It!: Inspired by Giada De Laurentiis
Lemon Torta Caprese (with Dark Chocolate)*
Ingredients:
3/4 stick (unsalted) butter
1 bar (100 grams/ 3.5 oz) dark chocolate
2 eggs
1/8 teaspoon fine iodized salt
1/3 cup fine granulated sugar
3/4 cup almond flour
1/8 cup lemon juice
2 teaspoons lemon zest
Directions:
*I halved Giada's recipe and used dark chocolate instead of white chocolate.
Lightly butter the inside of your baking dish. I used my favourite tester oval (9 1/2" x 6 1/2" x 2" deep).
Melt the chocolate and butter together in a double boiler over slightly simmering water until smooth.
Separate the eggs into 2 bowls: a medium bowl for the whites and larger bowl for the yolks.
With a handheld mixer, on medium speed, beat the whites with the salt to stiff peaks (2 - 3 mins).
On medium speed, also beat the yolks to light and fluffy (2 mins).
Using a rubber spatula, gently stir in the melted chocolate mixture, flour, lemon juice and zest into the yolks.
Fold the whipped whites (in 2 batches) into the chocolate mixture.
* Set the oven to 350 degrees F.
Pour the mixture into the baking dish and bake for 22 minutes. I used my trusty toaster oven. An inserted toothpick will come out clean.
Cool completely in the baking dish, then dust the top with confectioners sugar.
So simple; so delish!
