Because I'm never not taking home a container of fresh and lovely market strawberries in the heart of winter for some at-home fun. These are early and surprizingly sweet. And the squeeze of lemon sure adds an energizing mood boost. Light and delicious! Recipe after the jump...

Makes 1 1/2 quarts (Serves 6)
1 pound fresh strawberries, rinsed, hulled & sliced in half
3/4 cup fine granulated sugar
1/4 cup honey
1 cup whole milk
1 tablespoon freshly squeezed lemon juice
pinch of fine sea salt
1 teaspoon pure vanilla extract
1/2 cup heavy cream, cold
1 tablespoon vodka (optional)
Add the strawberries, sugar, honey, whole milk, lemon juice, sea salt and vanilla extract to a blender and blend to smooth. Pour into a large container and gently stir in the cold heavy cream. Chill in the refrigerator for 5 hours (to overnight). Stir in the vodka and churn in your ice cream maker for 25 minutes.
Enjoy soft serve as is, or place in a freezer-safe container (lid on) to firm up for a couple hours.
