Strawberry Granita
(Serves 6)
1 pound fresh strawberries (rinsed, hulled and sliced in half)
2 tablespoons freshly squeezed red grapefruit juice (or orange or lemon)
1/3 cup + 2 tablespoons fine granulated sugar
1 teaspoon pure vanilla extract
1/2 cup chilled boiled water
pinch of fine sea salt
Add the strawberries, red grapefruit juice and sugar to a high-powered blender. Cover and let sit for 45 minutes giving a gentle stir with a spatula every 15 minutes. Add the vanilla extract, water and sea salt to the blender and purée to very smooth.
Pour the smooth mixture into a wide freezer-safe dish and allow to freeze uncovered for 75 minutes. Remove from the freezer and using a fork, gently rake the icy edges towards the centre. Return the dish to the freezer and repeat every 45 minutes gradually breaking up all the larger inner chunks into smaller bits and ultimately fine crystals.
Serve in chilled glasses and top with freshly whipped heavy cream.
