// Apricot Summer Crumble

Two months ago, we had what I would call, the most glorious early arrival of fresh Garden of Eden apricots! They were perfect and then some, and although I was in the depths of other seasonal fruits at the time, I knew I had to take a few home right then and there as with experience we already know a return trip may not yield the same luck. Mother Nature always steers us in that beautiful unplanned direction, so I took eight home, we ate two, and I à la Suzette the remaining six, two days later. // Rhubarb & Ginger Granita

An end of spring and early summer beat-the-heat icy treat: Rhubarb & Ginger Granita, and I'd add more on the horizon... This simple granita was so much fun especially as it was the first time I 'worked' with the garden rhubarb. There's always much excitement with new recipe experimenting and my market rhubarb did not disappoint, celebrating with me during the process. For a slight 'zing', I added a little fresh ginger during the stove top simmering, and here we are a few hours later. Refreshing and delightfully delicious! And such a cheery colour. A bright and cheerful treat for everyone! My Clementine Maple Granita made with fresh and sweet Nour clementines from beautiful Morocco, and a tad of pure maple syrup (to also celebrate the beginning of our maple syrup season) is a true refresh for this time of year. Served with a generous dollop of light homemade maple whipped cream. We're ready for spring and safely stepping outdoors a bit more this year. Here's to sharing more happy and positive vibes with each other. The world sure needs it. Happy Spring! 🍊💕
